Hearty Flax & Einkorn Bread Rolls

These rolls are made with a mix of All-Purpose Einkorn flour and your choice of Whole Grain Einkorn Flour or Einkorn Wheat Berries, ground into flour. We added flax meal for a softer texture and one spoon of honey for a light sweetness.
Ingredients
- 1¼ teaspoons of active dry yeast
- 1 tablespoon (14 g) honey
- 1½ cups (355 g) of water, warm
- 2½ cups (240 g) Whole Grain Einkorn Flour or 1 ¼ cups (250 g) jovial Einkorn Wheat Berries, ground into flour
- 2 cups (240 g) All-Purpose Einkorn Flour
- ¼ cup golden flax meal
- 1 teaspoon (5 g) fine sea salt
Instructions
- Combine water, honey and yeast in a medium bowl and stand let stand for 10 minutes.
- In a large bowl, combine, einkorn flours, flax, and salt.
- Add wet ingredients to the flour mixture and combine with a stiff spatula or the Einkorn Kneading Tool. The dough will be sticky but do not add additional flour.
- Let rise in the large mixing bowl, covered with plastic wrap for 60 minutes.
- Preheat oven to 375°F and oil a large rimmed baking pan.
- Divide the dough in 12 equal pieces and form rolls by pressing the dough in a circular motion on a clean work surface, using a little flour if needed. If you are using for burgers or want a large roll, make 8 and flatten them considerably. They will pop back up in the oven.
- Place rolls on the prepared baking pan and let rise covered with a clean linen cloth or oiled plastic wrap for 20 minutes.
- Bake for 15-20 minutes until lightly golden brown. Transfer rolls to a wire rack and let cool for 30 minutes. Serve warm or room temperature. Store any leftover rolls in a sealed plastic bag for up to 3 days.
