Why Do We Cold Press?
Cold pressed, extra virgin olive oil means the olives are crushed into a paste and then pressed to extract the oil. The entire process is temperature controlled to never exceed 75F (ours is often below this temp!). This means the inherent flavors—and health benefits of the oil are preserved for longer, ensuring our oil is as flavorful when it reaches your home as it was when it was pressed. We use special caps to limit the amount of oxygen entering the bottle.
