Stelline Minestrone Soup
Ingredients
- 2 tablespoons jovial Extra Virgin Olive Oil
- 1 large onion, finely chopped
- 1 garlic clove, minced
- 4 cartons (67.6 oz) of Kettle & Fire Classic Bone Broth
- 1 jar (13 oz) jovial Borlotti Beans, drained and rinsed
- 1 jar (18.3 oz) jovial Diced Tomatoes
- 4 carrots, diced
- ½ teaspoon of dried oregano
- Salt and pepper to taste
- 1 cup jovial Brown Rice Stelline
- 1 package (10 oz) frozen spinach (thawed and squeezed dry)
- Parmigiano Reggiano (optional)
Instructions
- In a large pot, heat two tablespoons of olive oil over medium-low heat. Add the onion and garlic and cook for a few minutes, until tender.
- Add the tomatoes, carrots, beans, broth, oregano, salt, and pepper to taste. Bring to a simmer and cook until the carrots are tender, at least 15 minutes.
- Add one cup of stelline pasta and spinach. Cook until the pasta is al dente, checking for doneness around 8-9 minutes.
- Top with freshly grated Parmigiano Reggiano, if desired.
- Note: When heating leftovers, add a couple cups of broth, if necessary.
