Spaghetti & Cherry Tomato Caprese

This type of dish is really popular in Italian restaurants in the summer when tomatoes are ripe. Sautéing halved cherry tomatoes in olive oil soften them and flavor the oil nicely. Add some fresh mozarella and basil and you have an authentic Italian pasta dish.
Ingredients
- 12 oz. jovial Gluten Free Brown Rice Spaghetti
- 1 ½ lb. cherry tomatoes, halved
- 4 oz. fresh ciliegine mozzarella
- 1 cup fresh basil
- 3 tbsp. jovial Reserve Blend Extra Virgin Olive Oil
- 1 clove of garlic, minced
Instructions
- In a large skillet, cook olive oil, garlic, tomatoes and salt to taste, on high heat for 7-10 minutes until tomatoes are very soft but still hold their shape.
- Cook pasta according to package directions.
- Add cooked pasta to the skillet on medium heat for a minute, mixing the pasta and sauce well.
- Add mozzarella and basil and serve.
