Einkorn Zucchini Bread Recipe with Chocolate Chips

Ingredients
- 1 cup (125g), 2 small or 1 medium zucchini, finely grated
- 1¾ cups (210g) jovial all-purpose einkorn flour
- 1¾ tsp. (7g) baking powder
- ¾ tsp. (4g) baking soda
- ½ tsp. (2g) cinnamon
- ¼ tsp. (1g) salt
- 2 large eggs, room temperature
- 1 cup (200g) organic cane sugar
- 2 tbsp. (30g) plain yogurt
- ¼ cup (48g) jovial extra virgin olive oil
- ¾ cup (120g) chocolate chips
Instructions
- Preheat oven to 375°F.
- In a medium bowl, sift together flour, baking powder, baking soda, cinnamon and salt; set aside.
- In a large bowl, beat together eggs, sugar, yogurt, and olive oil. Stir in zucchini.
- Add the flour mixture into the wet ingredients until combined. Do not over mix.
- Use rubber spatula mix in chocolate chips.
- Oil a 9"×5" inch loaf pan, then pour in batter.
- Bake for 50-55 minutes or until cake tester comes out clean.
- Transfer to a cooling a rack and cool before serving.
