Dark Chocolate Einkorn Waffles

Makes 8 Large Waffles
Dark Chocolate Waffles with Einkorn Flour
Ingredients
- 2 ½ cups (300g) All-Purpose Einkorn Flour
- ⅔ cup (50g) Dutch process cocoa powder
- ⅓ cup (65g) granulated sugar
- ⅓ cup (65g) light brown sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon kosher salt
- 3 large eggs
- 2 cups (475ml) buttermilk
- 8 tablespoons (113g) unsalted butter, melted and cooled, plus more to serve
- 2 teaspoons vanilla extract
- ½ cup (90g) bittersweet chocolate chips, optional, plus extra to serve
- Nonstick vegetable oil spray
- Maple syrup and butter, to serve (optional)
Instructions
- In a large bowl add the einkorn flour, cocoa powder, both sugars, baking powder, baking soda, and salt and whisk to combine.
- In a separate medium mixing bowl, whisk together the eggs, buttermilk, butter and vanilla extract.
- Whisk the egg mixture into the flour mixture until all the dry bits are incorporated. If you’re adding chocolate chips, fold them in now.
- Spray your waffle maker with nonstick spray, and preheat.
- Depending on how large your waffle maker is, spoon anywhere from ½-⅔ cup batter into the center of your machine and cook according to manufacturer’s instructions.
- Because the batter is dark brown to begin with, you won’t be able to tell right away if you’re burning these, so be extra careful and test the first few you to gauge cook time – the thicker the waffle, the longer the cooking time.
- Serve immediately with butter and maple syrup (and a few extra chocolate chips if you’d like) or place on a rimmed baking sheet in a 200° F oven to stay warm until you’re finished making all of the waffles, so the whole family can eat together.
