Einkorn Farming Update

As you may or may not know, we grow all of the einkorn grain used to make our pasta and cookies here in Italy. We have four farmers in two different regions who are growing for us this year. One farm is located just down the road and today we took a ride there to see how the plants are growing. Spring arrived early this year and it has been close to 70 degrees and sunny each day. The Italian countryside is so beautiful, I thought I would take my camera along and share a few images with you.

It is hard to believe that this einkorn wheat grass will become a cookie or a bowl of spaghetti this fall, isn’t it?
