Einkorn, Palm Fruit Oil, Cocoa and Antioxidant Power
Einkorn is rich in carotenoids, like lutein and tocotrienols, a potent form of vitamin E. These important antioxidants give einkorn flour a deep yellow color.
Our cookies are made with sustainably grown organic palm fruit oil, also rich in carotenoids, like beta-carotene and lycophene. Palm fruit oil is an excellent source of vitamin E, containing both tocopherols and tocotrienols. The palm fruit has a beautiful ruby red color outside and orange pulp.
Organic cocoa is also well-known for its high content of flavonoids and polyphenols, making it another antioxidant-rich ingredient.
These ingredients come together with ancient einkorn wheat to make delicious cookies with a powerful Oxygen Radical Absorbance Capacity (ORAC) value. ORAC is a measurement of antioxidant activity in food or free radical scavenging capacity. Here is how Jovial einkorn cookies compare to some well-known superfoods.
