Olives
Olive Farm
We work with a special group of farmers who are safeguarding three ancient varieties of olives in the Veneto region in Northern Italy. They hand-pick the olives then we have them pressed and bottled by a local family for our extra virgin olive oil. Our olives are grown on several small farms that are just three to seven acres and are located within minutes of our partner’s press.
Most of the trees here have been growing in these hills for centuries, which makes the oil so fine. Just like wine, the older the plant, the better the flavor. In fact, several of these trees were planted thousands of years ago by the Romans as they expanded their empire. Our olive oil production partner, Daniele and his family, have been harvesting these olive varieties since 1895. However, many historic trees are being uprooted and replaced with new trees planted closer together so that machinery can be used to pick the olives. Mechanical harvesting can yield more olives, but does not provide the same pure taste.
We are committed to preserving these ancient trees and will continue to hand-pick our olives to maintain the highest-quality and best-tasting olive oil and to support these local farmers and their historically rich farming techniques that have been passed down from generation to generation.
